CORRECTION: At about 8:05 I mention using distilled water -- I meant filtered water -- spring or filtered water, or even tap water. Distilled water is NOT a good choice because your starter benefits from the minerals that distilled water removes.
NOTE: At the end, I mention leaving it for up to a week. You can actually leave it several weeks or even months, but it may take longer to wake up and revive after feeding -- may take an extra feeding or two to regain full strength.
Aren't going to use it for a while? Or it's way too much? Spread it out thinly on a sheet of parchment to fully dry, then crumble or blender-blend and then store the powder to rehydrate at a later time.
