Today, I'm revisiting famous last meals - this time, it's John Lennon's legacy to food history with the corned beef sandwich he ate from a New York deli for his last meal.

Recipe: Corned Beef
Toast 1 tablespoon whole mustard seeds, 1 tablespoon coriander seeds, 1 tablespoon chilli flakes, 1 tablespoon black peppercorns, 2 teaspoons cloves, 1 tablespoon cardamom pods, 6 large bay leaves, 2 teaspoons ground ginger and 1 cinnamon stick. Add spices to a large pot with 4 litres of water, 300g salt and 90g brown sugar. Bring to a boil to infuse, then leave to cool. Submerge trimmed brisket in brine, seal in an airtight container and cure for 5-7 days in the fridge. Once cured, rinse the brisket and place in a slow cooker, covered in beef stock. Cook on low heat for 8-9 hours.
