🥘 About Today's Recipe: Authentic Sindhi Dal Pakwan
Dal Pakwan is the ultimate Indian comfort food and a truly royal breakfast dish. The culinary combination of the soft, flavorful yellow chana dal and the crunchy, cumin and ajwain-flavored pakwan creates a perfect balance of textures and spices. By cooking this outdoors in large quantities over an open wood fire, the rustic flavors are dramatically enhanced, bringing true village-style authenticity to a classic, beloved Indian dish.
📝 Ingredients Used for our Village Style Dal Pakwan:
For the Rich Chana Dal:
Split Bengal Gram (Chana Dal) - soaked and pressure cooked
Fresh Water (for boiling and consistency)
Turmeric Powder (Haldi)
Salt to taste
Ghee or traditional Cooking Oil
Cumin Seeds (Jeera)
Asafoetida (Hing)
Green Chillies (slit)
Red Chilli Powder
Dry Mango Powder (Amchur) for tanginess
Fresh Coriander Leaves (for garnish)
For the Crispy Pakwan (Flatbread):
All-Purpose Flour (Maida)
Semolina (Sooji) for extra crispiness
Carom Seeds (Ajwain)
Cumin Seeds (Jeera)
Ghee (clarified butter) rubbed into the dough
Salt to taste
Water for kneading a firm dough
Oil for deep frying in large kadhai
For the Traditional Garnish & Serving:
Sweet Dates and Tamarind Chutney (Khajur Imli Chutney)
Spicy Green Coriander and Mint Chutney
Finely chopped raw onions
👨🍳 How to Make Dal Pakwan (Brief Village Process):
Preparing the Dal: We thoroughly wash and soak the chana dal, then boil it with turmeric and salt until it is tender but with the grains still beautifully separate. We then prepare a traditional, aromatic tadka (tempering) using hot ghee, cumin seeds, asafoetida, and red chilli powder, pouring it directly over the thick, simmering dal.
Frying the Pakwan: We mix maida, sooji, salt, ajwain, and a little ghee to form a stiff dough. We roll it into thin circular flatbreads, prick them extensively with a fork so they do not puff up, and deep fry them in massive vats of hot oil until they reach a beautiful golden brown and cracker-like crispy texture.
The Final Assembly: The piping hot chana dal is poured over the broken pieces of crispy pakwan and generously garnished with sweet and spicy chutneys and onions before being served lovingly to the children!
