This simple no bake, no blend recipe does not require cashews or other nuts, and has no coconut taste.
It's a vegan mini cheesecake that actually tastes like cheesecake!
Also, the jelly layer is flavored and colored with real peach, so artificial food colorings and such are not used at all.

Tips
• Feel free to use glass tumblers for layering and serving in if you don't have the steel rings. Otherwise, it's best eaten just after unmolding while still slightly frozen.

• Choose a peach that is sweet but firm, and not too juicy.
This makes it easier to cut thinner and more even slices, while also ensuring that the peach filling won't leak water.

• The Tofutti brand cream cheese is used as it already has setting agents

Ingredients:
(makes 2)

Vegan Peach Cheesecake

• 20g Digestive biscuits, crushed
• 8g Vegan butter, melted
• 120g Tofutti brand cream cheese
• 30g Sugar, sifted
• 2.5g Vanilla (½ tsp)
• 4g Lemon juice (~1 tsp)
• 1 Small peach, sweet but firm
• 100g Water
• 10g Sugar (1½ tsp)
• 1/8 tsp Agar

Essential equipment:

• 2x round 60mm ring molds (or drinking glasses)
• small pot
• tea strainer
