It’s wonderfully soft and moist, with sweet apple pieces and a rich, nutty swirl of cinnamon and walnuts inside, the perfect treat for any time you crave something warm and comforting! 🍎🍰

🍎 Ingredients (Apple Cake with Walnut-Cinnamon Center):
For the cake batter:
120 ml milk (1/2 cup) + 1 tbsp vinegar
3 large eggs, at room temperature
1/2 tsp vanilla
120 g sugar (about 2/3 cup)
110 ml vegetable or sunflower oil (about 1/2 cup)
180 g all-purpose flour (1 1/2 cups)
1 tsp baking powder
1/2 tsp baking soda
1/4 tsp salt
For the walnut-cinnamon center:
50 g chopped walnuts (1/2 cup)
30 g flour (1/4 cup)
50 g brown sugar (1/4 cup)
2 tsp ground cinnamon
1/4 tsp salt
55 g melted butter, cooled (1/4 cup)
Fruit:
1 medium apple, peeled and chopped
🍰 Loaf Pan Size:
22 x 13 x 7 cm (9 x 5 inch)
⏱️ Baking Time:
Bake in a preheated oven at 350°F (180°C) for 50–55 minutes
🧁 Prepare the Batter:
First, mix 120 ml milk with 1 tbsp vinegar. Stir once and set aside for 20–30 minutes.
In a large bowl, whisk together 3 eggs, 1/2 tsp vanilla, and 120 g sugar until pale and creamy.
Add in the milk-vinegar mixture and 110 ml oil, mixing well.
Sift together 180 g flour, 1 tsp baking powder, 1/2 tsp baking soda, and 1/4 tsp salt.
Gradually mix the dry ingredients into the wet ingredients on low speed until just combined.
🥣 Prepare the Walnut-Cinnamon Mixture:
In a separate bowl, mix 50 g chopped walnuts, 30 g flour, 50 g brown sugar, 2 tsp cinnamon, and 1/4 tsp salt.
Pour in the melted and cooled 55 g butter, stirring until crumbly.
🔥 Assemble and Bake:
Preheat your oven to 350°F (180°C).
Grease or line a loaf pan with parchment paper.
Pour half of the batter into the prepared pan.
Add half of the chopped apples and half of the walnut-cinnamon mixture.
Pour the remaining batter on top.
Finish by sprinkling the rest of the apples and the remaining walnut-cinnamon mixture on top.
Bake for 50–55 minutes, or until a toothpick inserted in the center comes out clean.
Once baked, let the cake cool in the pan for 10 minutes.
Then transfer to a wire rack to cool completely.
