RECIPE:
Ingredients:
2.5-3.5 oz Kataifi
150-200 grams of Pistachio Spread/Butter
2-4 sheets of Puff Pastry
½ cup of Chocolate Chips
2 tbsp Butter
1 egg (For egg wash)
Optional Ingredients:
Powdered sugar
1 tsp of Almond Extract (Optional for the filling)
TOOLS:
Cookie cutter of your choice at least 2.5 inches in diameter

Instructions:
Preheat oven to 350 degrees Fahrenheit
1- Melt the butter on a pan in medium heat
2- Add the kataifi and evenly distribute and coat with the melted butter. Toast the katafai until lightly browned. Do not over toast.
3- Pour the toasted kataifi in a bowl and add the pistachio spread. Mix and distribute evenly. Add more pistachio spread if desired.
4- Take one pastry sheet and use a rolling pin to gently stretch it out.
5- Take your desired cookie cutter and cut out as many shapes as you can. You can re-roll the dough and make more cut outs. Use a rolling pin to gently stretch each cut out.
6- Add 2-3 tablespoons of the kataifi mixture. Then, add a few pieces of chocolate chips. Dab some egg wash on the edges and cover with another cut out. Use a form to secure the edges.
7- Using a pastry brush, spread a thin layer of egg wash on top of each stuffed pastry puff. Use a fork to poke the center of each. Bake for 12-15 minutes. (Note: It is recommended to bake one first to test the appropriate time and temperature, as all puff pastry sheets can differ in baking directions) Let it cool for at least 10 minutes before sprinkling some powdered sugar on top.
