Welcome to Somtum Der - New York!
We are making Tum Thai (Spicy Papaya Salad) today as a part of 'Thai Select USA' Kitchen Quarantine Cooking.
Ingredients:
120 gram juliened green papaya
2 chilis
1 clove of garlic
4 pieces of long bean (1 inch each)
4 halves of cherry tomatoes
1/2 lime
2 tbsp roasted peanuts
1 tbsp dried shrimp
1/4 palm sugar (or 1 tbsp)
1 tbsp fish sauce
1 tbsp tamarind sauce (If not available, replace with more lime juice)
Instructions:
1. In the mortar, crush garlic and chilis
2. Add long beans and use the pestle to smash until the beans are broken
3. Add peanuts and dried shrimp (optional). Pound and mix the ingredients. Make sure to crush the peanuts.
4. Add cherry tomatoes. Pound lightly.
5. Add plam sugar and lime (squeeze the lime juice and put in the lime skin)
6. Pound everything together. Mix well.
7. Add green papaya. Use a spoon to help flipping the ingredients.
8. Ready to serve!
