Spicy Korean Ramen Beef Noodle Soup
Ingredients stock (15 min)
1 (6-inch) piece kombu
fry (5 min)
2 pounds beef short ribs or oxtails
1 medium onion, split in half
1 (3-inch) knob ginger, cut into 3 slices
Add aromatics (simmer 5 hours)
12 scallions, divided
2 tablespoons canola oil
8 cloves garlic, divided
2 tablespoons gochujang
1 tablespoon doubanjiang
1 1/2 quarts homemade or store-bought low-sodium chicken stock
Add kombu water
Add kimchi water/juices
Season to taste with
1 tablespoon soy sauce
Kosher salt and freshly ground black pepper
Finish ramen with
8 ounces hon-shimeji or sliced shiitake mushrooms
Fried beef with garlic ginger and miso paste
Scallions
Kimchi
Sesame seeds
Eggs cut open
Crunchy chili garlic
ramen-style noodles
2 ounces niboshi or shaved katsuobushi
For the eggs
4 – 5 large eggs 2 oz in weight (plus more in case any of the eggs crack!)
For the marinade
¾ cup Mirin or Aji mirin
¼ cup regular soy sauce
¼ cup dark soy sauce if you can’t find it, substitute with an equal amount of regular soy sauce + 1 tbsp brown sugar
Optional spices
½ tsp cayenne pepper
2 cloves of garlic, or 1 inch piece of ginger sliced
1 star anise
Boil
6 min from room temperature
Ice bath
Peel under water
Mariande submerged overnight
