I had a nice batch of Heritage Farms Cheshire Pork cheeks that I needed to cook. It's hard to beat a smoke/braise process on these! If any of you were fortunate enough to join us a the December Atlanta Grill Company Fire Show, you may have had the opportunity to taste the ones I made there. This is a nearly identical process with a little different flavor profile!
