Oven-roasted garlic is full of flavor and incredibly easy to make. Elevate the flavor of so many dishes by adding roasted garlic: mashed potatoes, pizza sauce, pesto, and meatballs.
Roasted garlic needs to roast in the oven for about an hour, but if you're baking something else you can toss in a few heads to roast while your dinner cooks. Voila, 2 for 1!
This roasted garlic recipe only requires 3 ingredients: garlic, olive oil, S&P. Wrapped in foil and into the oven at about 400 for 45-60 minutes.
How to tell when it's done: The cloves will be light golden brown, soft to the touch, and will have shrunk in size quite a bit. Some cloves may appear to be 'popping out' of the papery skins.
You can overcook roasted garlic-- the individual cloves will harden a bit and loose the uber-creamy consistency. These cloves will still taste amazing but aren't as smooth and spreadable.
It's very common when making roasted garlic to squuuueeze the individual roasted cloves out of the head into a roasted garlic paste.... If you want to keep your roasted garlic cloves intact for presentation's sake, say on a charcuterie board or the like, let the roasted garlic cool fully to room temperature then remove each clove. I'd recommend doing this prior to refrigerating.
Also: this will last in the fridge for about a week. Alternatively, you can roast up a bunch at once and freeze it for use as needed, in the freezer roasted garlic will keep for several months.
