Palitaw recipe ingredients
Palitaw with yema filling (sticky rice with custard candy filling)
750 grams glutinous rice
2 cups water
1/2 cup white sugar
1 cup grated coconut
2 tbsp sesame seeds, toasted
Banana leaves for palitaw /sticky rice liners (optional)
For yema /custard candy filling
300 ml condensed milk
2 egg yolks
1 tbsp butter
Procedure
Prepare the yema / custard candy filling
Place a saucepan on a medium to low heat.
Mix together the butter, condensed milk and egg yolks.
Stir very well to evenly combine.
Stir constantly for about 10 minutes or until the custard become sticky.
Set aside to cool.
Combine sugar and sesame seeds
Prepare the palitaw /sticky rice
Place the glutinous rice in a bowl.
Gradually add water to form a soft and smooth dough but firm enough to knead into a ball.
Portion the dough and then form it into a ball.
Flatten the dough using the palms of hands.
Put a teaspoon of cooled yema/custard candy in the middle of flattened dough.,then seal to close and form into an oval shape. Do the same with the rest of the dough.
Boil a pot of water and drop the flattened dough.
Cook for about 3 minutes or until the dumplings float onto the surface of the boiling water.
Use strainer to drain excess water.
Put some banana leaf liner then drench the palitaw /sticky rice in grated coconut.
Serve with combine sugar and sesame seeds.
