375g mixed dried fruit
125g brown sugar
1 cup Irish Cream 250 ml
1 teaspoon vanilla extract
2 cups self-raising flour 250g
1 teaspoon mixed spice (optional)
1 egg, beaten

Icing
150g icing sugar
3 tbsp warm water (go easy with the water)
1 tbsp lemon juice
