Ingredients:
For Potato Wedges:
(600g) potatoes
(60g) olive oil
(5g) 1tsp smoked chili powder
(5g) salt
(3g)1 tsp garlic powder
1 ½ (12g) breadcrumbs
1/2 cup (60g) Parmesan cheese
1 ½ tsp mixed dried herbs (½ tsp oregano, ½ tsp thyme, ½ tsp parsley)
For Yogurt Dipping Sauce:
2 cups Greek yogurt
1 tsp (5g) mayonnaise
1/2 tsp garlic powder
Salt and pepper, to taste
Instructions:
Preheat your oven to 425°F (220°C) and line a baking sheet with parchment paper.
Wash the potatoes thoroughly and cut them into wedges, leaving the skin on for extra flavour or and texture.
In a large bowl, combine the olive oil, garlic powder, breadcrumbs, Parmesan cheese, paprika, chili powder, salt, pepper, and mixed dried herbs. Mix well to create a flavour ful seasoning mixture.
Add the potato wedges to the bowl with the seasoning mixture and toss until evenly coated.
Arrange the seasoned potato wedges in a single layer on the prepared baking sheet.
Bake in the preheated oven for 25-30 minutes, or until the potato wedges are golden brown and crispy, flipping halfway through cooking for even browning.
While the potato wedges are baking, prepare the yogurt dipping sauce. In a small bowl, combine the Greek yogurt, mayonnaise, garlic powder, salt, and pepper. Mix well until smooth and creamy.
Once the potato wedges are done, remove them from the oven and let them cool slightly before serving.
Serve the crispy herb-roasted potato wedges hot with the tangy yogurt dipping sauce on the side.
