Enjoy a nutritious and delicious one-pot quinoa sandwich that's packed with fibers, proteins, and essential micronutrients. Perfect for a balanced and healing meal! 🌿🍽️
Ingredients:
🥄 1 cup quinoa, washed and soaked for 30 mins
🧅 1 onion, diced
🌶️ 2 bell peppers, diced
🌮 2 tbsp Mexican seasoning
🥬 1/4 cup cooked chickpea or sprouted chickpea
🧂 Salt to taste
🥬 Handful of spinach
🍋 Juice of half a lime
Instructions:
1️⃣ Sauté the diced onion for 2 minutes.
2️⃣ Add the diced bell peppers and sauté for another 2 minutes.
3️⃣ Stir in the 2 tbsp of Mexican seasoning and mix well
4️⃣ Add the soaked and drained quinoa, 1/4 cup cooked chickpea/ sprouted chickpea followed by 1 cup of hot water, and mix well.
5️⃣ Season with salt to taste, cover with a paper towel or cloth, then put on the lid.
6️⃣ Cook on low flame for 20-25 minutes.
7️⃣ Remove the paper towel and lid, turn off the flame, and mix in the handful of spinach and the lime juice.
8️⃣ Serve hot and enjoy!
