Ingredients serve about 4-6 people.

1 whole chicken or equivalent in chicken parts
enough chicken stock or water to cover the chicken completely
1 cup of pearl barley, rinsed https://amzn.to/3u6mgQM
3-4 large leeks, cleaned and sliced into 1/2-inch pieces (use white and light green parts only)
2 carrots, peeled and chopped
2 celery stalks, chopped
1 onion, chopped
2 bay leaves
A few sprigs of fresh thyme (or 1 tsp dried thyme)
Salt and pepper, to taste
Optional: 6-8 prunes (traditional but can be omitted)
