Irresistible Roasted Eggplant Hummus Recipe - Easy Homemade Hummus Vegan and Gluten Free hello green
This irresistible mediterranean style roasted eggplant hummus recipe is one of my favorite to share with you. Easy to make homemade hummus which is also vegan and gluten free. Ingredients:
2 Cups Dry Chickpeas
1 Eggplant
1 Lemon
5 Basil Leaves
2 Garlic Cloves
4 Tbsp Extra Virgin Olive Oil
1 & ½ Tbsp Salt
1 Tbsp Cumin
½ Tbsp Black Pepper
½ Tbsp Chili Powder (or 1 Tbsp if you like more flavor)
Preparation:
Soak the chickpeas overnight for about 12 hours, drain the water and rinse well. Add the chickpeas to a pressure cooker and cook for 25 minutes. Slice the eggplant in 4 thick slices, rub some olive oil and salt to each slice and place in a baking sheet along with 1 or 2 cloves of garlic, depending on how much flavor you like. I used 1 large clove of garlic. Bake the eggplant and garlic in the oven for 35 minutes at 350 F (176 C). Meanwhile the chickpeas have cooked. Drain the water from the chickpeas and set aside. Once the eggplant and garlic are roasted set aside as well. After the chickpeas cool off a bit add to a blender. Next add the roasted eggplant and garlic, fresh basil, remaining olive oil and all the spices including salt, black pepper, cumin and chili powder. Add freshly squeezed lemon juice and one cup of water. Blend the ingredients until smooth consistency. Depending on the blender you have you may need to pause and mix the ingredients with a spatula so the ingredients on the top get blended as well. Then continue blending until smooth. For a smoother texture you can add additional ½ cup of water and mix a bit longer. I like the hummus chunky so I don’t add more water. Once the hummus is blended serve in your favorite dish and top with olive oil. Enjoy!
