In this video, I’m sharing 3 delicious Pola recipes perfect for Ramadan Iftar.
🥕 Carrot Pola – soft, sweet and flavorful
🍗 Butter Chicken Pola – creamy and rich chicken snack
🥩 Beef Pola – Kerala style spicy beef pola
These Pola recipes are very easy to make and perfect for evening snacks, Iftar table, or tea time.

🥕 Carrot Pola :
🔪 Ingredients :
🥣Carrots – 2–3 medium (chopped) 🥣Eggs – 3
🥣Sugar – 5 tbsp
🥣Milk powder – 5 tbsp 
🥣Cardamom powder – 1/4 tsp
🥣Ghee or oil – 1 tbsp 
🥣Cashews & raisins – a small handful (for garnish)
🥣Peel the carrots and cut them into small pieces.
🥣Boil or steam them until soft (about 10–12 min). Drain excess water. 
🥣Transfer the cooked carrots to a blender.
🥣Add eggs, sugar, and cardamom powder.
🥣Blend until smooth and well mixed. 
🥣Add Milk powder & Blend
🥣Grease a thick-bottomed pan with ghee or oil.
🥣Pour the blended carrot mixture into the greased pan.
🥣Cover the pan with a tight lid.
Cook on very low flame for 15–20 minutes — this cooks the batter slowly and evenly without burning. 
🥣After 7-8 minutes, open the lid and add the nuts on top.
🥣Once the top looks firm and the sides have pulled slightly away, poke with a toothpick — it should come out clean.
🥣Let it sit for a few minutes, then invert onto a plate. 
🍗 Butter Chicken Pola –
Ingredients
1 CUP =240 ML
SERVES -3
FOR BUTTER CHICKEN MASALA
Boneless chicken -200 g
chilli powder -1 tsp
Turmeric powder -1/4 tsp
Garam Masala powder -1/4 tsp
Black pepper powder -1/4 tsp
curd -1 tbsp
salt
oil -2 tsp
butter -2 tsp
Cumin seeds -1/4 tsp
Onion -1
Tomato -1/2
chilli powder -1/2 tsp
Garam Masala powder -1/6 tsp
Black pepper powder-1/6 tsp
Pinch of salt
Kasuri methi powder -1/2 tsp
cream -1 tbsp
Coriander leaves -2 tbsp
FOR BATTER
eggs -2
milk -3/4 cup
oil - 3 tbsp
salt
maida/all purpose flour -3/4 cup
baking powder -1/4 tsp
🌙🌟 Method:
🥣In a bowl, add chicken, spice powders, curd, and salt.🥣Mix well so all pieces are coated.🥣Rest for 15–20 minutes .🥣Heat a pan on medium flame.🥣Add oil + butter.🥣Add cumin seeds; let them splutter.🥣Add the marinated chicken and Cook on high flame for 5 minutes.🥣Add chopped onion and sauté till soft .🥣Add tomato + pinch of salt; cook .🥣Add Masala powders, Mix well. 🥣Cook covered for 6–8 minutes, stirring occasionally, until chicken is fully cooked.🥣Add kasuri methi, cream & coriander leaves.🥣Mix gently and cook 1 more minute.
🥣Switch off flame. Keep aside.
🥣In a blender , add eggs, milk, oil, and salt. Blend well.
🥣Add maida and baking powder and blend🥣Heat a non-stick pan on low-medium flame.🥣Lightly grease with ghee.🥣Pour the batter and spread gently.🥣Add prepared butter chicken masala evenly. Decorated with coriander leaves .
🥣Cover with lid and cook on low flame for 15 - 20 minutes.🥣After 15 minutes, poke it with a toothpick.
🥣gently flip.
👉 Use low flame only – this ensures soft texture inside.
🥩 Beef Pola
Ingredients
For Beef Masala
• Beef – 300 g (cooked & shredded)
• Onion – 1 medium (chopped)
• Turmeric powder – 1/4 tsp
• Beef masala – 3/4 tsp
• Chilli powder – 3/4 tsp (adjust to spice level)
• Pepper powder – 1/2 tsp
• Garam masala – 1/4 tsp
• Fennel seed powder – 1 pinch
• Salt – as needed
• Oil – 2 tbsp
For Batter
• Egg – 2
• Milk – 1 cup
• Oil – 1/2 cup
• All purpose flour (Maida) – 1 cup
• Pepper powder – 1/2 tsp
• Salt – as required
1️⃣ Prepare Beef Masala
1. Heat oil in a pan.
2. Add chopped onion and sauté until soft.
3. Add turmeric powder, chilli powder, beef masala, pepper powder, garam masala and fennel powder.
4. Mix well and add the cooked shredded beef.
5. Cook for a few minutes until the masala becomes slightly dry. Keep aside.
2️⃣ Prepare Batter
1. Add eggs, milk, oil, maida, pepper powder and salt into a mixie jar.
2. Blend well until you get a smooth batter without lumps.
3️⃣ Make Beef Pola
1. Heat a greased pan on low flame.
2. Pour half of the batter into the pan and spread evenly.
3. Close the lid and cook for 3–4 minutes until the top starts to set slightly.
4. Then spread the prepared beef masala evenly over the first layer.
5. Pour the remaining batter on top.
6. Cover and cook on low flame for about 15–20 minutes until fully cooked.
7. Carefully flip if needed and cook the other side for a few minutes.
