Chicken Marination Ingredients
Boneless Chicken: Cut into small dices/cubes
Red Chili Powder: 1 tsp
Black Pepper Powder: 1/2 tsp
Cumin Powder (Jeera): 1/2 tsp
Ginger-Garlic Paste: 1 tsp
Green Chili Sauce: 1 tsp
Garam Masala: 1/2 tsp
Chili Flakes (Kuti hui Lal Mirch): As needed
Food Color: A pinch of orange/zarda color
Cornflour: 1 tbsp (for the initial coating)
Salt: To taste
Potato & Slurry Ingredients
Potatoes: 4 medium-sized (peeled and cut into thin, uniform round slices)
Cornflour: 2 tbsp (for the slurry)
Water: As needed to make the slurry
Salt: To taste (added to the slurry)
Toothpicks: To secure the butterfly shape
Oil: For deep frying
Quick Preparation Steps
Marinate: Mix the chicken with all the spices, ginger-garlic paste, sauces, and cornflour. Let it rest for 15 minutes.
Prepare Potatoes: Cut potatoes into thin slices. Prepare a cornflour slurry with water and salt, then soak the potato slices in it for 5 minutes to make them flexible and seasoned.
Assemble: Take a potato slice, place a piece of marinated chicken in the center, fold the potato over the chicken, and secure it with a toothpick to create the "butterfly" look.
Fry: Deep fry in medium-hot oil for about 6-7 minutes until the potatoes are golden and crispy and the chicken is fully cooked.
