This native jollof rice is packed with flavors and is very easy to make!
Ingredients
7 cups long grain parboiled rice
1 cup palm oil
6oz tomato paste (1 tin) + 1 tablespoon
Steamed pepper mix (see notes)
1/3 cup crayfish powder
½ cup big crayfish/shrimps
11/2 cups shredded stock fish
2 tablespoons vegetable oil
½ red onions (chopped)
1 tablespoon locust beans
2 cups meat stock (see notes)
5-6 cups water
5-6 bay leaves
1 whole smoked mackerel fish deboned
2 teaspoons chicken bouillon
1 tablespoon dried thyme
1 tablespoon dried oregano
1 teaspoon dried rosemary
Salt to taste
For the steamed pepper mix, you will need:
4 large red bell peppers
1 green bell pepper
3 chili peppers
2 habanero peppers
3 tatashe peppers (soaked and softened)
2 red onions
Notes:
*You can substitute meat stock for water if you don’t have meat stock. Meat stock is great for more flavor

*Be sure to cook your jollof rice on very low heat . For reference I used level 3 on my stove
