Can you make light, delicious gnocchi using freshly milled hard white wheat? Yes, but you have to know a few tricks! In this video, I’m testing the popular @FarmhouseonBoone potato and ricotta gnocchi recipe, but with a whole grain twist.
I swapped the all-purpose for unsifted hard white wheat berries to see if we could get a nutritious dinner that doesn't taste like cardboard. I also tested boiling the potatoes vs baking them—and the results gave us a hearty, rustic pasta that held up perfectly in sauce without turning to mush.
If you are looking for a freshly milled flour pasta recipe that has a satisfying "al dente" bite, this is the one to try.
