IIngredients:
• Beets: 2 medium (1.1 lbs / 500g) 🥔
• Chickpeas: 1 can (15 oz / 425g) or ¾ cup / 150g dry (soaked) 🫘
• Onion: 1 medium (5 oz / 150g) 🧅
• Carrot: 1 large (4 oz / 115g) 🥕
• Celery: 1 stalk (1.5 oz / 40g) 🌿
• Tomato Paste: 2 heaped tbsp / 1.5 oz / 40g 🍅
• Garlic: 3 cloves, minced 🧄
• Vegetable Broth/Water: 6 cups / 1.5 Liters 💧
• Vegetable Oil: 2 tbsp 🍳
The Spices & Herbs:
• Ground Coriander: 1 tsp 🌿
• Ground Fenugreek: ½ tsp ✨
• Green Onions (Scallions): 2-3 stalks (0.5 oz / 15g), finely sliced 🧅🌱
• Fresh Cilantro: 1 small bunch 🌿
• Red Chili Flakes, Salt, Black Pepper: to taste 🌶🧂
• Bay Leaf: 1 pc 🍃
For Serving:
