Cheddar Jalapeno Bread with Sauteed Onions and Garlic
Ingredients:
1 cup warm water (105-115°F)
1 packet (2 1/4 teaspoons) active dry yeast
1 teaspoon salt
3 cups all-purpose flour
1/2 cup grated sharp cheddar cheese
1/4 cup chopped jalapenos (seeds removed for less heat)
1/4 cup finely chopped onion
2 cloves garlic, minced
Instructions:
Activate the yeast: In a small bowl, combine warm water and yeast. Let stand for 5 minutes, or until foamy.
Combine dry ingredients: In a large bowl, whisk together flour and salt.
Add wet ingredients and yeast: Pour the yeast mixture into the dry ingredients. Stir until a shaggy dough forms.
Add cheese, jalapenos, onion, and garlic: Stir in the grated cheddar cheese, chopped jalapenos, onion, and minced garlic.
Knead: Transfer the dough to a lightly floured surface and knead for 5-7 minutes, or until smooth and elastic.
Rise: Place the dough in a greased bowl, cover with plastic wrap, and let rise in a warm place for 1 hour, or until doubled in size.
Shape: Punch down the dough and shape into a loaf. Place the loaf in a greased 9x5 inch loaf pan.
Second rise: Cover the loaf with plastic wrap and let rise for another 30 minutes.
Bake: Preheat oven to 375°F (190°C). Bake the loaf for 30-35 minutes, or until golden brown and sounds hollow when tapped.
Cool: Let the bread cool in the pan for 10 minutes before transferring to a wire rack to cool completely.
