Recipe
1. 1 kg potatoes
2. 1 kg eggplants
3. 2 medium dry onions
4. 2-3 garlic cloves
5. 200 gr tomato sauce
6. 50 gr olive oil
7. parsley
8. salt-pepper
9. 250 gr water
Leave the mixture in the pan at low to medium heat for approx. 1 hour until the potatoes are done.
Procedure
Please cut the potatoes into smaller cubes than the eggplants, as they need more time to get done. The onions can be cut into quite big pieces. You can also replace the tomato sauce with ground tomato if you wish, and in general, you can increase or decrease the amount of the ingredients, based on your personal preferences.
Please note that in such recipes I am using a cast iron pan. It evenly distributes and retains high heat making the food tasting better.
Description
"Yiahni" is a word taken from the turkish language meaning stew (usually with vegetables, tomato sauce and dry onions). This is a wide spread dish in the Greek cuisine. It can also be prepared with other ingredients such as fish, or meat. The most common dish, though, is patates yiahni (stew with potatoes) - plain, which is also vegan.
