Recipe
1. 500 gr boiled pasta
2. 1 lt milk substitute (with no added sugar)
3. 100 gr all purpose flour
4. 30 gr olive oil (+ 30 gr to oil the pan)
5. 1/4 tsp ground nutmeg
6. 300 gr feta cheese substitute
7. 200 gr meat substitute (optional)
8. salt-pepper
Bake at 180 C (fan assisted) for 35 min.
Procedure
This pie is a variation of another Greek dish called "pastitsio". The pasta that is usually used is spaghetti N2 for pasititsio, so that it is much easier to be cut, but any other spaghetti can also be used. The sauce that is used is the béchamel sauce, comprised of olive oil, milk, flour and ground nutmeg.
When preparing the pie, I have replaced eggs from the original recipe with meat substitute. However, this is optional.
Please note that when you make the béchamel sauce, put the olive oil first, then most of the milk, but keep some to mix with the flour. When the milk reaches the boiling point, add this mixture and stir until the sauce is done, and you see bubbles on the top. By making the sauce in this way, the mixture becomes smoother.
Description
Makaronopita is a traditional Greek food, a savory macaroni pie made with pasta, cheese and eggs, and often encased in filo pastry. It can be found in both vegetarian and meat-based versions, with ingredients like feta, other types of Greek cheese, and sometimes minced meat. It can also be made without filo.
