Ingredients:
3 Packages of Microwave Popcorn (butter flavored is best)
2 Cups Brown Sugar
2 Sticks Butter/Margarine
½ Cup Karo Light Corn Syrup
1 teaspoon Salt
1 teaspoon Baking Soda
Supplies Needed:
Three-quart sauce pan
3 Large Cookie Sheets
Candy Thermometer
Kitchen Measuring Devices
Scraper/Spatula
Whisk
Wax Paper
Oven Mitts
1 Clean Paper Grocery Bag
READ ALL THE INSTRUCTIONS BEFORE COOKING (Some of the steps have to happen in rapid succession so it's best to know what you need to do ahead of time)
1. Melt together Butter, Sugar, Karo Syrup, and Salt, stirring occasionally, over medium heat on stove. Leave the sauce pan uncovered.
2. Begin cooking your three bags of microwave popcorn while waiting for ingredients to melt together on stove.
Do not scorch the popcorn. Empty cooked popcorn into clean paper grocery bag and shake it up a bit. The butter flavor coating will help to grease the inside of the paper bag and keep the caramel form sticking to it later.
3. Once the ingredients on the stove are melted together, insert the candy thermometer. The mixture must reach EXACTLY 300 degrees Fahrenheit (149 degrees Celsius) to achieve "Hard Crack" texture.
Make sure the tip of the candy thermometer is NOT TOUCHING THE BOTTOM of the sauce pan as this will give a false temperature reading. Be patient! The temperature will rise quickly at first, then plateau for a while before finally reaching 300 degrees Fahrenheit (149 degrees Celsius). It usually takes about 28 minutes on my stove over medium heat.
4. While you're waiting for the mixture to achieve the correct temperature, lay out your cookie sheets and put wax paper on them. Also, make sure the 1 teaspoon of baking soda, the whisk, and the popcorn in the grocery bag are near the stove.
5. Just as the mixture reaches 300 degrees Fahrenheit (149 degrees Celsius) remove the mixture from heat, and add the baking soda to the mixture. Quickly whisk the mixture with the baking soda added. There will be a reaction that will foam the mixture a bit.
6. When you are satisfied that the mixture and baking soda have been thoroughly mixed, pour the entire mixture into the grocery bag with the popcorn.
7. Fold the bag rim over a couple times and shake, shake, shake! The better you shake the bag the more uniform the caramel coating on the popcorn will be.
8. Place the bag of coated popcorn in the microwave for 1 minute. While it is in the microwave, get some oven mitts because the bag is going to be VERY hot when it comes out.
9. At the end of the first minute in the microwave, remove the bag, shake it again, and put It back in the microwave for an additional minute.
10. After the second minute is up, remove the bag and shake it one last time.
11. Pour the contents of the bag onto the three cookie sheets. Scrape out the bag for caramel corn that has stuck to the inside. Break up the clumps on the cookie sheets and let cool. Enjoy!
