Recipe and Ingredients
DAAL MOONG 200g SOAKED
DAAL MASOOR 200g SOAKED
DAAL MAASH 200g SOAKED
150g WHOLE WHEAT SOAKED
150g BARLEY SOAKED
CHANNA DAAL 200g SOAKED
RICE 200g SOAKED
300 ML OIL
250 G ONIONS SLICED
1-1/2 KG MUTTON
1 TSP CUMIN
1 TSP BLACK PEPPER CORNS
10-12 CLOVES
1/2 TSP KABAB CHEENI
3 BLACK CARDAMOM
2 CINNAMON STICKS
8-10 GREEN CARDAMOM
2 TBSP RED CHILI POWDER
1-1/2 TBSP CORIANDER POWDER
1-1/2 TBSP SALT (CAN ADD AS PER TASTE)
1 TSP TURMERIC POWDER
3 FRIED ONIONS (BARISTA)
FRIED ONION OIL 1 CUP
1 TBSP BLACK PEPPER
1/2 TBSP GARAM MASALA
In a pressure cooker add daal moong 200g soaked, daal masoor 200g soaked, daal maash 200g soaked, 150g whole wheat soaked, 150g barley soaked, channa daal 200g soaked, rice 200g soaked. Add 1-1/2 liter water and cook on pressure for 15-20 minutes. After cooking blend it well until its smooth.
In anther cooker add 300 ml oil and 250g onions and let it fry until brown. Now add 1-1/2 kg mutton and cook for 3-4 minutes. Now add 1 tsp cumin, 1 tsp black pepper corns, 10-12 cloves, 1/2 tsp kabab cheeni, 3 black cardamom, 2 cinnamon sticks, 8-10 green cardamom, 2 tbsp red chili powder, 1-1/2 tbsp coriander powder, 1-1/2 tbsp salt (can add as per taste) and 1 tsp turmeric powder. Cook for 2 minutes and now add 250g yogurt and now cook it further for 10-12 minutes. After this add 1-1/2 liter water and cook on pressure for 25-30 minutes. After pressure, separate the meat and de bone it.
Now in a big pan add the daal mixture we already blended. Now by intervals add meat and masala in which meat is cooked. Mix it well with a heavy wooden spoon as shown in the video. Now add the rest of the meat and mix well for 10-12 minutes. Now add fried onions (2-3 fried onions barista). Mix this well and add fried onion oil (1 cup) in intervals and mix well for another 8-10 minutes. Now add 1 tbsp black pepper, 1/2 tbsp garam masala add mix well for another 3-4 minutes. The haleem is ready to be served with green chillies, lemon wedges and fried onions!
