Recipe & Ingredients

1-1/2 kg Mutton
1 kg rice

Yakhni Masala
1 tbsp coriander
6-7 cloves
1 tsp fennel
1 tsp cumin
2 cinnamon
4 black cardamom
½ tsp black pepper corns
2 star anise
1 garlic bulb
1 onion
2 small ginger pieces

Kharay Masalay
1 tbsp black cumin
3 black cardamom
6-7 cloves
½ tsp black pepper corns
2 cinnamon sticks
4-5 green cardamom

5 tsp salt
250g Tomatos
200g Onions
100g Yogurt
ginger slices
5-6 green chilies
2 tbsp ginger/garlic paste

In a pressure cooker add 1-1/2 kg Mutton, 1 tbsp coriander, 6-7 cloves, 1 tsp fennel, 1 tsp cumin, 2 cinnamon, 4 black cardamom, ½ tsp black pepper corns, 2 star anise, 1 garlic bulb, 1 onion, 2 small ginger pieces and 2 liters of water and cook on pressure for 12 minutes. Once cooked, seperate mutton stock and mutton pieces.

Now in a separate pan add 200g Ghee and and add 200g onions and cook until light brown in color. Now add all kharay masalay - 1 tbsp black cumin,3 black cardamom, 6-7 cloves, ½ tsp black pepper corns, 2 cinnamon sticks and 4-5 green cardamom. Cook for a minute and add 2 tbsp ginger/garlic paste. Cook for a minute and add 250g tomatos and 3 tsp salt and cook it for 3-4 minutes until tomatos softens. Now add 100g yogurt and the meat we separated from the stock and cook well for 5-6 minutes.

At this stage add ginger slices and 5-6 green chilies and let it cook for 2 minutes. Now add 1-1/2 liter mutton stock that we made and cook until it starts boiling. At this stage add salt as per taste. Now add 1 kg rice and cook again for 2-3 minutes. Now add 50ml milk on rice and cook on dum for 15 minutes. The Yakhni Pulao is now ready to be served!
