Simple Pumpkin Sugar Cookies (for painting & decorating)

Pumpkin Purée
• Roast pumpkin wedges until soft
• Scoop out flesh and blend until smooth
• Store extra for soup or baking

Pumpkin Sugar Cookies
• ¾ cup butter, softened
• ¾ cup sugar
• ½ cup pumpkin purée
• 1 egg
• 1 tsp vanilla
• 2½ cups flour
• ½ tsp baking powder
• ½ tsp baking soda
• 1½ tsp pumpkin spice
• ¼ tsp salt

Cream butter and sugar.
Add egg, pumpkin, and vanilla.
Mix dry ingredients separately, then combine.
Chill dough, roll out, cut, and bake at 175°C / 350°F for 10–12 minutes.

Simple Paintable Icing
• 1 cup icing sugar
• 1–2 tbsp milk or water
• A drop of vanilla

Mix until just fluid enough to spread thinly.
Let set slightly, then paint with diluted food colouring.
