Cake batter
166g Manjari dark chocolate 64%
30g cocoa paste 100%
20g honey
5g vanilla extract
175g melted butter 84%
68g egg yolks
145g icing sugar
70g roasted almond powder
5g baking powder
147g flour type 55
9g dark cocoa powder
2g salt
135g egg whites
68g sugar for meringue
100g chopped Manjari 64%
Preheat your oven to 180oC then fix it to 150oC. Melt the chocolate, cocoa paste, inverted sugar, butter and vanilla extract temperature should be 50-55oC. Mix together the egg yolks, icing sugar, salt for 2 minutes, add the roasted almond powder and the sifted dry ingredients. Mix together with the first chocolate mixture, temperature should be 40oC. whip the egg whites and sugar into meringue then mix with the first mixture delicately. Final temperature of the mix is 30oC. Pipe the batter into the cake mold and bake at 150oC for 25 minutes.
Brushing for cake
160g soft butter
40g flour
Mix the soft butter with the flour until they become creamy. Reserve at room temperature.
Assembly:
Brush your mold with the butter and flour mixture then let them set aside. Pour 400g from the cake batter in the mold and bake at 150 degrees celcuis for 25-30 minutes. Allow the cakes to cool down completely at room temperature. Once the cakes are cold remove them from the mold and enjoy! bon Appetit.
