Mutton curry with potatoes recipe
================================
Ingredients
___________
For onion turmeric paste
______________
5 shallots medium sized or 1 cup
4 cloves
black pepper corns, 1/2 tsp
cumin seeds, 1 tsp
1 whole black cardamom
whole coriander seeds, 1 tsp
1 inch fresh turmeric
Ginger Garlic paste
_________________
7-8 garlic cloves
2 Root and stem of coriander
Ginger , 2 tbsp
3 green chillies
little water if needed
Marinade
_________
Ginger, garlic, green chill and coriander stem paste, 1 tbsp
Turmeric powder, 1/2 tsp
Chilli powder, 1 tsp
Cumin powder, 1 tsp
Coriander powder, 1 tsp
Mustard oil, 1 tbsp
Juice of half a lime
Salt, 1 tsp
For cooking

1 kg goat, curry cut with bones
1 large tomato, pureed
6 baby potatoes, peeled
Salt to taste
Mustard oil, 1 cup
cumin seeds, 1 tsp
2 whole red chillies
3-4 small bayleaf
1 small piece of cinnamon stick
1 black cardamom
Coriander powder, 1 1/2 tbsp
Kashmiri chilli powder, 1 1/2 tbsp
Cumin powder, 1/2 tbsp
Hot red chilli powder
Garam masala, 1 tsp
meat masala powder, 1 tsp
3 cups boiling water
Fresh coriander, for garnish
Method
======
Coarsely grind the onion/shallots and turmeric together. Next grind ginger, garlic, coriander roots and green chillies into a paste and set aside.
Use 1 tbsp of the ginger garlic paste for the marinade.
Coat and massage the mutton with the marinade ingredients and set aside for 1 hour.
Heat a pot on medium high and add mustard oil and allow it to smoke. Add the cumin seeds, red chillies, bayleaf, cinnamon stick and cardamom and let the oil infuse for a minute. Add the onion turmeric paste, salt and cook till golden brown about minutes. Add tomato puree and cook for 2-3 minutes.
Add the marinated goat, mix and cook for 5 minutes. Add the remaining ginger garlic paste, mix well and again cook till the oil separates another 5 -6 minutes.
Add the powdered spices - Coriander, kashmiri chilli, hot chilli cumin, garam masala and meat masala. Mix well and let it cook for -6 minutes.
Add the boiling water, cover and cook on low flame for 30 minutes. Add potatoes, fresh coriander, and cook for another 10 - 15 minutes or till the goat and the potatoes have cooked through.
Goat curry with potatoes is now ready. Enjoy!!

Grind the onion paste and ginger garlic paste separately and set aside. Use 1 tbsp of the ginger garlic paste in the marinade.
Coat and massage the mutton with the marinade ingredients and set aside for 1 hour
