Recipe -
Ingredients:
1. Mustard Oil / Sarso Ka Tel - 2 tbsp
2. Asafoetida / Hing - A pinch
3. Cumin Seeds / Jeera - 1/2 tsp
4. Ginger / Adrak - 1 Inch grated
5. Green Chilli / Hari Mirchi - 1 to 2 Sllited
6. Onion / Pyaz - 2 Finely chopped
7. Gram Flour / Besan - 2 tsp
8. All Spice Mix powder / Garam Masala - 1/2 tsp
9. Salt - As per taste
10. Red Chilli Powder / Lal Mirch Powder - 1 tsp
11. Cumin Seeds Powder / Jeera Powder - 1 tsp
12. Turmeric Powder / Haldi Powder - 1/2 tsp
13. Paneer Masala - 1 tsp
14. Chaat Masala - 1/2 tsp
15. Tomato / Tamatar - 2 Finely chopped
16. Water - As required
17. Coriander Leaves / Hara Dhaniya - A handful + For Garnishing
18. Dry Fenugreek Leaves / Kasuri Methi - 1 tsp
19. Cottage Cheese / Paneer - 1 Cup grated
20. Curd - 1/2 Cup whisked
21. Butter - As required
22. Bread - 2 Slices
Instructions:
1. Heat mustard oil in a pan. Add asafoetida, cumin seeds, ginger, green chilli, and onion. Mix well.
2. Saute it for 1 to 2 minutes on high flame. Keep stirring occasionally.
3. Now add besan and mix well. Keep stirring continuously to roast the besan.
4. Then add all spice mix powder, salt, red chilli powder, cumin seeds powder, turmeric powder, paneer masala, and chaat masala. Mix well.
5. Further, add tomato and mix well. Saute it for 1 to 2 minutes on medium flame. Keep stirring occasionally.
6. Add a few drops of water and mix well. Saute it for 1 to 2 minutes on medium flame. Keep stirring occasionally.
7. Then add coriander leaves and dry fenugreek leaves. Mix well.
8. Now add curd and mix well. Keep stirring continuously for 1 to 2 minutes.
9. Then add paneer and mix well. Add a few drops of water and mix well.
10. Once done, turn off the flame and garnish it with coriander leaves. Take it out in a serving bowl. Add a small piece of butter on it.
FOR ROASTING BREAD SLICES :
1. Heat a tawa. Grease it with butter. Put both bread slices on it.
2. Roast it for 1 to 2 minutes on a low flame. Flip it to roast the other side as well.
3. Once it is roasted from both sides, turn off the flame. Transfer it to a serving plate
4. 'Amritsari Paneer Bhurji | Paneer Bhurji' is ready to be served.
