This copycat recipe delivers unbelievably juicy, tender roasted chicken smothered in a vibrant, spicy, and addictive lemon garlic sauce, served with perfectly fluffy and fragrant yellow basmati rice.
🍗 Spicy Lemon Garlic Chicken (Chicken Maison Copycat)
Ingredients:
1 whole chicken (4-5 lbs)
2 tbsp olive oil
2 lemon wedges
For the Seasoning Mix:
2 tsp salt
1 tsp black pepper
1 tsp chicken bouillon powder
1 tsp garlic powder
1 tsp onion powder
1 tsp paprika
1/2 tsp dried thyme
1/2 tsp cayenne pepper (adjust to taste)
For the Stuffing:
1 medium onion, roughly chopped
4-5 cloves garlic, chopped
1-2 serrano peppers, chopped
2 tbsp butter
2 tsp apple cider vinegar
1 tsp of the Seasoning Mix (above)
For the Spicy Lemon Garlic Sauce:
All pan drippings from the roasted chicken (about 1/2 cup)
1/4 cup fresh basil, chopped
2 green onions, chopped
3 cloves garlic, minced
2 tbsp Lee Kum Kee Chili Garlic Sauce
Juice of 1/2 a lemon
Instructions:
Let the chicken sit at room temperature for 1 hour. Pat dry. Preheat oven to 375°F (190°C).
Make Stuffing: Melt 1 tbsp butter in a pan over medium heat. Sauté onion until browned. Add 1 more tbsp butter, garlic, serrano peppers, and 1 tsp seasoning mix. Sauté 2 minutes. Deglaze with apple cider vinegar. Let cool completely.
Season Chicken: Stuff the cavity with the cooled stuffing and lemon wedges. Take the fat from the chicken cavity (or use 3 tbsp softened butter mixed with 1 tsp seasoning mix) and place it under the skin of the breast.
Rub chicken with olive oil. Sprinkle the entire outside with the remaining seasoning mix. Tie legs with twine.
Roast: Place chicken in a roasting pan with 1/8 inch of white wine or water. Roast for about 1.5 hours (until breast hits 160°F), adding 1/2 cup water halfway. Rest for 10 minutes.
Make Sauce: Carefully pour pan drippings into a saucepan, strain if desired. You should have about 1/2 cup. Add Basil, green onion, minced garlic, chili garlic sauce, and lemon juice. Warm over medium-low heat for 2-3 minutes until combined.
Carve chicken and pour the warm sauce all over.
Shortcut Version: Use a store-bought rotisserie chicken. For the sauce, substitute pan drippings with 1/4 cup olive oil + 1/2 cup chicken stock. Heat and proceed from Step 6.
🍚 Fragrant Yellow Basmati Rice
Ingredients:
1 1/2 cups basmati rice
2 tbsp vegetable oil
3 cups water
1 tsp turmeric
1/2 tsp garlic powder
1 tsp salt (or to taste)
Instructions:
Rinse rice in cold water until water runs clear. Drain well.
In a pot with a tight lid, heat oil over medium heat. Add drained rice and toast, stirring often, for 3-4 minutes until grains puff and turn opaque.
Add turmeric, garlic powder, and salt. Stir for 30 seconds until fragrant.
Add water and bring to a vigorous boil.
Once boiling, immediately reduce heat to low, cover tightly, and simmer undisturbed for 18 minutes.
Turn off heat and let it steam, covered, for 5 more minutes. Fluff with a fork before serving.
