Gluten-Free Crepes - Easy Mini Crepe Cake

This is a very easy recipe for gluten-free crepes. Use them to wrap anything or make a crepe cake. The batter consistency may vary depending on what type of gluten-free flour you are using. You may have to add more liquid if needed.
Ingredients:
1 cup gluten-free all-purpose flour (I use Bob's Red Mill in the red bag.)
3 large eggs
1/2 tsp vanilla
1-2 TB. melted butter
1-1/2 cups almond milk or any kind of milk
1/4 tsp salt
1/2 tsp xanthan gum
2-4 TB water, if needed
Extra ingredients for making mini crepe cake:
Pastry cream
Chocolate ganache
Method:
1. Mix everything together with an electric hand mixer or in a blender or food processor until well combined. Pour the batter through a sieve for a smoother texture if needed.
2. Chill the batter in the fridge for 30 minutes. optional.
3. Heat a crepe pan or a non-stick skillet over medium heat and grease with a little bit of melted butter or oil.
4. Pour 1/4 cup of the batter into the pan and swirl the pan so that the batter spreads out evenly. Let it cook for 2 minutes.
5. When the edges start to dry, flip the crepe and cook for another 1-2 minutes.
6. Place the crepes in a flat dish.
Making mini crepe cake:
7. Cut out crepes into 3" rounded crepes using a round cookie cutter.
8. Spread some pastry cream between the layers as many layers as wanted.
9. Pour some chocolate ganache over the crepe cake.
