In this video I’m going to show you how to make and decorate a 6” Mango chiffon cake. We are also going to make the mango preserves and mango chocolate drip. There’s also mango puree added into the cake batter, so this cake is truly a “mango heaven” for all mango lovers!

Ingredients 材料:
1) Mango preserves (芒果果酱):
• 2 cups dice mango (2杯芒果丁)
• ½ cup sugar (½ 杯糖)
• 1 tablespoon fresh-squeezed lime juice (1 汤匙鲜榨青柠汁)
• Zest of ½ lime (半顆青柠皮)
2) 6” Cake (6寸蛋糕):
• 25g mango puree (25克 芒果泥)
• 20g Milk (20克 牛奶)
• 30g Veg. Oil (30克 植物油)
• 3 Eggs (3个蛋黄)
• 55g Cake flour (55克 低筋面粉)
• 45g Sugar (45克 糖)
• 1/2 tsp Cream of tartar or lemon juice (1/2茶匙 塔塔粉或柠檬汁)
3) Mango Chocolate Drip (芒果巧克力酱):
• 20g Mango puree (20克 芒果泥)
• 15g Sugar (15克 糖)
• 1g Gelatin sheet (1克明胶片)
• 10g Heavy whipping cream (10克重质鲜奶油)
• 25g White chocolate chips (25克白巧克力片)
4) Whipped cream frosting (奶油糖霜):
• 1-1/2 cup Heavy whipping cream (1-1/2 杯浓奶油)
• 4-1/2 tbsp Powdered sugar (4-1/2 汤匙糖粉)
Convert to 8” Cake (转换为8寸蛋糕):
• 42g mango puree (42克 芒果泥)
• 35g Milk (35克 牛奶)
• 50g Veg. Oil (50克 植物油)
• 5 Eggs (5个蛋黄)
• 92g Cake flour (92克 低筋面粉)
• 75g Sugar (75克 糖)
• 1/2 tsp Cream of tartar or lemon juice (1/2茶匙 塔塔粉或柠檬汁)
Whipped cream for the 8" cake: just double the recipe above. (8"蛋糕的奶油:只需将上述配方翻倍即可。)
Baking time and temperate for 8" cake is the same as 6". Check the cake by inserting a skewer into it and see if it comes out clean. If not, then bake for 5 more minutes. (8"蛋糕的烘烤时间和温度与 6"蛋糕相同。将竹签插入蛋糕中看抽出来时是否干净,检查蛋糕是否已经烤好。如果没有,则再烤多 5 分钟。)
