Step-by-Step:
1. Prepare the Vegetables: Start by chopping 5 pieces of bitter gourd into small pieces and boiling 4 medium potatoes until they are fully cooked. Also, boil 1 cup of green peas until tender.
2. Mix the Ingredients: In a large bowl, combine the boiled and chopped bitter gourd, potatoes, and green peas. Add 1 large chopped red onion, 6 chopped cloves of garlic, 2 chopped red chilies, and 1/2 cup of freshly chopped coriander leaves.
3. Add Sesame and Seasoning: Stir in 2 tablespoons of ground roasted white sesame seeds. Season with salt to taste and 1 teaspoon of turmeric powder for that authentic flavor.
4. Prepare the Tempering: In a pan, heat 2 tablespoons of vegetable oil. Add 1 teaspoon of fenugreek seeds and let them splutter. Then, add a pinch of turmeric powder and immediately pour this tempering over the prepared vegetable mix.
5. Final Touch: Squeeze the juice of 1 lemon over the pickle and mix everything thoroughly with your hands to ensure all ingredients are well combined.
Let it rest for a few hours to allow the flavors to meld together. Enjoy this tangy and savory pickle with your favorite dishes!
