Suya Yaji / Suya Spice.
The perfect blend for grilling fish, meat, chicken, anything!
Kitchen equipments needed-
Dry mill or blender/ Food processor
Kitchen Weighing scale
Pan for roasting seeds on heat.
Substitutions
Kuli Kuli- Peanut powder/ baked ground groundnut
Cayenne pepper- chilli pepper powder
Paprika- optional.
Fennel seeds, star anise, Ehuru seeds can be added for extra flavour.
Ingredients
120g Kuli Kuli
60g/ 4 tbsp ground ginger
3 long African Negro Pepper/ Uda
1/2 tbsp paprika
11/2 tbsp cayenne pepper
1/2 tsp uziza seeds / Piper Guineense
10g / 2 tbsp onion flakes
1/2 tbsp salt
1 Bouillon cube
Directions
1. Crush Kuli Kuli in a dry mill.
2. Remove seeds from Uda. Toast Uda back and Uziza seeds in a dry pan on low heat until fragrant.
3. Pour Uda and Uziza into food processor/ dry mill with Kuli Kuli.
4. Add the remaining ingredients (ground ginger, onion flakes, paprika, cayenne pepper and pulse till ground and smooth.
5. Sieve the powder, season with salt and Bouillon. Store in a dry container in a cool place or freezer.
