Jangri is a popular and traditional #festivesweets from Tamil Nadu. This #Jangri is made using urad dal, sugar, and orange food colour. You can now make this #Jhangri with Cookd’s simple recipe. Do try this recipe and share your feedback with us.
Jangri Recipe:
Urad Dal - 250 grams
Water - ¼ Cup / As Needed
Cornstarch - 2 tbsp
Orange Food Colour - As Needed
Oil - For Deep-Frying
Mixed Nuts (chopped) - For Garnish
Sugar Syrup:
Sugar - 3 Cups
Water - 1 Cup
Green Cardamom - 2 nos
Lemon Juice - 1 tbsp
Orange Food Colour - As Needed
Cooking Instructions:
1. Wash the Urad dal and soak for 1 hour.
Sugar Syrup:
1. Add the sugar, water and green cardamom to a pan. Turn on the heat and cook until the sugar syrup has thickened.
2. Add lemon juice and orange food colour. Mix and set aside, covering it so that it remains warm.
Making the Batter:
1. Drain the water completely. Grind it into a smooth paste, adding minimal water as required.
2. Transfer the mixture into a bowl. Add cornstarch and a few drops of orange food colour. Mix using your hands or using a whisk for 5-10 minutes or until fluffy.
3. Test the consistency of the batter by dropping a small portion in a bowl of water. If it floats, it is at the right consistency. Transfer this batter to a piping bag or to a squeeze bottle.
Making the Jangris:
1. In a flat pan, heat oil. Over medium heat, squeeze the batter into the oil. Make a large circle twice and then make smaller circles over the large circle.
2. Once the oil bubbling starts to subside, flip the Jangris. Cook until it reaches the same orange-red colour on both sides.
3. Drain off the excess oil and transfer it to warm sugar syrup. Let it soak for 4 minutes.
4. Transfer it to another tray/plate. Once they are all fried and soaked, garnish with chopped nuts.
Cooking Tips:
1. Make sure that the oil is not too hot. Fry the Jangri on medium heat.
2. You can also make this dish without orange food colour. It will turn out slightly whitish brown in colour.
