Ingredients
1 kg pork (fat separated)
Salt to marinate
Masala to Grind
10–15 garlic cloves
1 small piece ginger
½ tsp peppercorns
5–7 cloves
1–2 cinnamon sticks
1 tsp cumin
1 tsp turmeric powder
3 tsp vinegar
Little water for grinding
Other Ingredients
1 big onion, sliced
2–3 dry red chillies, broken
2–3 kokum petals
1 tsp crushed ginger-garlic
Lemon-sized ball of tamarind
Tamarind water, strained
1 tsp sugar
Salt to taste

Method
Soak a lemon-sized ball of tamarind in hot water and set aside.
Marinate pork with salt.
Grind garlic, ginger, whole spices, cumin, turmeric, and vinegar into a semi-coarse paste.
Mix this masala with the salted pork and marinate overnight (or 2–3 hours).
Add marinated pork to a pot along with sliced onion, broken chillies, and crushed ginger-garlic.
Add kokum petals and pour the strained tamarind water.
Cook until pork is tender and gravy thickens.
Adjust salt and finish with sugar.
