Hi friends, today we are making a signature dish from Qazvin Province in Iran. This one has a secret ingredient that sounds unusual but tastes amazing in this braise.
You can enjoy this one with bread, or on top rice with some herbs on the side
Ingredients List:
Main:
Lentils: 2 cups brown or green lentils, soaked for about an hour
Lamb Meat: ~1 lb deboned lamb leg, excess fat removed
Prunes: 1 cup
Tomato Paste: A couple of tablespoons
Tomato: 1 diced
Onions: 2 medium (or 1½ if large), chopped
Potatoes: 3, peeled and cut
Fresh Parsley: Chopped, for garnish
Lime or Lemon: Juice of 2 (or substitute with sour grape juice or verjuice if available)
Liquid Saffron: A few tablespoons, bloomed
Oil: A couple of tablespoons for sautéing
Spices:
Salt: 2½ tsp (plus an extra ½ tsp to taste)
Black Pepper: 1 tsp
Red Chili Pepper: 1 tsp
Turmeric: 1 tsp
Garlic Powder: 1 tsp
