This chili seasoning blend is designed to taste like a classic kit style Texas chili. Chili powder plus ancho gives depth, cumin brings the backbone, smoked paprika adds warmth, and a touch of cocoa rounds the whole thing out without making it sweet. The optional masa harina thickener gives you that familiar kit texture.

Replaces: 1 kit seasoning (for 2 lb meat)
Single use yield: about 45 g
Bulk jar yield: about 540 g (12x), or about 612 g with masa included

Single use, 1 kit equivalent (for 2 lb meat)
Chili powder 20 g (about 2 1/2 tbsp)
Ancho chili powder 10 g (about 1 1/2 tbsp)
Ground cumin 6 g (about 2 tbsp)
Smoked paprika 3 g (about 1 tbsp)
Garlic powder 2.5 g (about 1 tbsp)
Onion powder 2.5 g (about 1 tbsp)
Mexican oregano 1 g (about 1 tbsp)
Black pepper 1 g (about 1 tsp)
Cayenne pepper 0.6 g (about 1/2 tsp)
Unsweetened cocoa powder 1 g (about 1 tsp)
Optional thickener packet: masa harina 6 g (about 1 tbsp)
Bulk jar, 12x
Chili powder 240 g
Ancho chili powder 120 g
Ground cumin 72 g
Smoked paprika 36 g
Garlic powder 30 g
Onion powder 30 g
Mexican oregano 12 g
Black pepper 12 g
Cayenne pepper 7.2 g
Unsweetened cocoa powder 12 g
Optional: masa harina 72 g
🥄 Instructions
Whisk everything in a bowl until uniform.
Funnel into an airtight jar and shake hard for 15 seconds.
Label: “45 g seasons 2 lb meat. Salt free.”
Optional grind method
If your chili powder is coarse, pulse the blend 2 to 3 quick pulses in a spice grinder for a smoother, more kit like texture. Do not powder it completely or it clumps easier.
How to store
Airtight glass jar, wide mouth preferred.
Store in a cool dark pantry.
Best flavor for 6 to 9 months.
Measure with a dry spoon, never shake over steam, and keep away from the stove. A food safe desiccant packet helps.
