🥣 Ingredients
White button mushrooms 90 g, very finely minced (about 1 1/2 cups)
Neutral oil 10 g (about 2 tsp)
Kosher salt 1 g (about 1/4 tsp)
Unsalted butter 20 g (about 1 1/2 tbsp)
Yellow onion 40 g, very finely minced (about 1/3 cup)
All purpose flour 25 g (about 3 tbsp)
Beef broth 200 g (about 3/4 cup + 1 tbsp)
Water 40 g (about 3 tbsp)
Worcestershire sauce 5 g (1 tsp)
Soy sauce 4 g (about 3/4 tsp)
Sugar 2 g (about 1/2 tsp)
Black pepper 0.4 g (about 1/4 tsp)
Onion powder 1 g (about 1 tsp)
Optional: beef bouillon 0.5 g (small pinch)
Optional: MSG 0.25 g (tiny pinch)

Cook mushrooms: Heat oil, add mushrooms and salt, cook 6 to 8 minutes until reduced, no hard browning.
Soften onion: Add butter and onion, cook 4 to 5 minutes until very soft, no browning.
Make roux: Stir in flour, cook 1 to 2 minutes until smooth and foamy.
Add liquid: Whisk in broth and water, simmer gently.
Season: Add Worcestershire, soy, sugar, pepper, onion powder, and optional boosters. Simmer 2 to 3 minutes.
Blend smooth: Blend until completely smooth with no visible mushroom pieces.
Final texture: Cool fully. It firms up like the can.
