Recipe for 8 gyros
250 g (3.5 dl / 1.5 cup) vital wheat gluten
150 g (2 dl / 1 cup mashed chickpeas (any kind of bean works as well)
3 tbsp tomato purée
3 tbsp nutritional yeast
3 tbsp soy sauce (tamari or amino acids is also fine)
1 dl / 0.5 cup vegetable stock
2 tsp ground black pepper
2 tsp salt
2 tbsp oregano
1 tbsp cumin
1 tbsp smoked paprika (or regular paprika)
1 tbsp onion powder
1 tbsp garlic powder
optional:
1 tsp thyme
1 tsp nutmeg
1 tsp dried dill
1 tsp rosemary
Marinade before frying
3-4 tbsp soy sauce (tamari or amino acids is also fine)
1 tsp garlic powder
1 tsp onion powder
1 tsp smoked paprika
1 tsp black pepper
Mint Tzatziki
400 g / 14 oz coconut milk
1 cucumber
0.5 lemon
2-4 cloves of garlic
15 leafs of mint
Salt
1 red onion
2 dl / 1 cup apple cider vinegar
lettuce
tomatoes
Pita bread or tortillias

150 g (ca 2 dl) mosade kikärtor (Bönor funkar ocksål)
3 msk tomatopuré
3 msk näringsjäst
3 msk japansk soja
1 dl grönsaksfond
2 tsk svartpeppar
2 tsk salt
2 msk oregano
1 msk spiskummin
1 msk smoked paprika (vanligt paprika-pulver funkar också)
1 msk lökpulver
1 msk vitlökspulver
Eventuellt:
1 tsk timjan
1 tsk muskot
1 tsk torkad dill
1 tsk Rosmarin
Marinad innan stekning
2-4 msk japansk soja
1 tsk lökpulver
1 tsk vitlökspulver
1 tsk rökt paprikapulver
1 tsk svartpeppar
Mynta-Tzatziki
400 g kokosmjölk
1 gurka
0.5 citron
2-4 vitlöksklyftor
15 myntablad
Salt
1 rödlök
2 dl äppelcidervinäger
