I really hope you try this Damson Gin recipe. Damsons in the UK can be found on country hedgerows in September and early October and this is a great way of using this free fruit!

INGREDIENTS
450g Washed Damsons
600ml Gin *
225g Caster or Granulated Sugar. I use unrefined golden

Some people say you can use any cheap supermarket gin, which you can but I find if you pay a bit more and get something that you’d be happy to drink like in a gin and tonic then the damson gin tends to have a more refined flavour and less alcohol fieriness. I use Bombay Sapphire as I prefer it to other similar priced gins (ie it isn’t a premium gin) and it’s often of offer!

We like to make a batch of this a year in advance so that we have it ready for Christmas with the fruit having had 6 months in the gin but you can sieve it out after 3 months and use this years batch.
