Ingredients
Servings: 6
1 28 ounce can of tomatillos
1/2 cup(s) cilantro stems and leaves, plus more for garnish
4 garlic cloves
1/2 lb bacon, chopped
1 lb sirloin, cubed
Salt, to taste
1 14.5 ounce can of pinto beans, rinsed and drained
3 limes, cut into wedges
1 sour cream, to serve
Diced onions, to serve
10 tortillas, to serve
Directions 8 Steps | 90 Minutes
Step 1
First, puree the tomatillos in a food processor until smooth.
Step 2
Filter out the seeds with a fine strainer. Put one cup of the tomatillo puree back in the food processor and save the rest.
Step 3
Add the garlic and cilantro to the food processor and puree until smooth. Set this aside for later.
Step 4
Cook the chopped bacon pieces in a big Dutch oven on medium heat until brown.
Step 5
Add the cubed sirloin chunks to the pot and cook in the bacon fat until brown on all sides.
Step 6
Add the tomatillo puree and the garlic cilantro sauce to the pot. Stir and mix until well combined. Then add salt to taste.
Step 7
Put in the pinto beans and let the mixture boil. Lower the heat and cook until the beef is soft and tender. This will take about 1 hour.
Step 8
Ladle the carne en su jugo into bowls and garnish with lime, sour cream, diced onion and cilantro. Warm the tortillas and serve them with carne en su jugo. Enjoy!
