Both burritos are paired with a homemade cilantro lime rice and I'm also sharing 2 sauce recipes — a smoky chipotle sauce and a fresh cilantro jalapeño sauce — that take these from good to incredible.

Taco Seasoned Beef Burrito:
1 lb (454g) Ground Beef
12-inch Tortillas
8 oz (226g) Colby Jack Cheese, shredded
Cilantro Lime Rice (recipe below)
3.5 tbs Taco Seasoning (or 1 packet store bought)
1 tbs (15g) Brown Sugar
1 tbs (16g) Tomato Paste
3/4 cup (170g) Beef or Chicken Stock
1 can (425g) Black Beans, drained and rinsed
Pickled Red Onions, optional
2–3 tbs (30–45g) Olive Oil
Kosher Salt
Cilantro Lime Rice:
2 cups (280g) Basmati Rice, rinsed
2 cups (480g) Water
1/4 cup (10g) Cilantro, minced
6 tbs (85g) Unsalted Butter
3 tbs (45g) Lime Juice, freshly squeezed
Kosher Salt
Chipotle Sauce
1/2 cup (120g) Duke’s Mayo
1/4 cup (60g) Sour Cream
2 (~30g) Chipotle Peppers in Adobo
1 tbs (15g) Whole Grain Dijon Mustard
1 tbs (15g) Lime Juice
Lime Zest
1/2 cup (20g) Cilantro
1 tsp Garlic Powder
1/2 tsp Kosher Salt
Black Pepper
Taco Seasoning Recipe:
1 tbs Chili Powder
1 tsp Corn Starch
2 tsp Salt
1 tsp Onion Powder
1 tsp Cumin
1 tsp Paprika
1 tsp Garlic Powder
1 tsp Black Pepper
Chipotle Chicken Burrito:
1 lb (454g) Boneless Skinless Chicken Thighs
3 Chipotle Peppers in Adobo, minced
8 oz (226g) Colby Jack Cheese, shredded
Cilantro Lime Rice (recipe below)
1 can (425g) Black Beans, smashed
Pickled Red Onions, optional
Chipotle Marinade:
6 tbs (90g) Olive Oil
2 tbs (42g) Honey
2 tbs (30g) Lime Juice, freshly squeezed
6 cloves Garlic, crushed
3–4 Chipotle Peppers in Adobo, minced
1 tsp Cumin
3 tsp (18g) Kosher Salt
1/2 Yellow Onion, minced
Cilantro Jalapeno Crema:
1/2 cup (120g) Duke’s Mayo
1/4 cup (60g) Sour Cream
1 tbs (15g) Lime Juice, freshly squeezed
Lime Zest
1/2 cup (20g) Cilantro
1 clove Garlic
2 Jalapeños, seeded and roughly chopped
1 tbs (15g) Whole Grain Dijon Mustard
1/2 tsp Kosher Salt
