Join us as we escape to the incredible West Fork Butte Fire Lookout for a two-night stay perched high above the forest. This trip had everything we love about Montana: sweeping mountain views, dramatic weather, and the best huckleberry patch we’ve ever found.
⛈️ Storm Watching
Throughout our stay, we watched multiple rainstorms roll across the mountains—lightning in the distance, mist weaving through the trees, and sunsets that turned the sky gold between each wave of rain. There’s nothing quite like cozying up in a lookout tower while nature puts on a show.
🫐 Huckleberry Heaven
Just below the lookout, we stumbled upon an insanely abundant huckleberry patch. Hands-down the most loaded bushes we’ve ever seen. Fresh berries, purple fingers, and smiles all around!
🔥 Huckleberry Bannock in the Storm
With the storms rolling through, we mixed up a batch of warm, rustic huckleberry bannock and enjoyed it right in the tower. Fresh-picked berries + crackling rain = absolute perfection.

Do-Ahead Bannock
Ingredients
Dry Mix
2 cups all-purpose flour
1 Tablespoon sugar
1 Tablespoon Baking Powder
½ teaspoon fine sea salt
For Cooking
1 cup milk
½ cup canola oil
Salted butter
Instructions
Dump the flour, sugar, baking powder and salt together in a sturdy resealable bag. Seal well and shake the mix together thoroughly. May be made in advance.
Add almost 1 cup of milk to the bag of dry mix (water also works). Seal the bag and squish it around gently just to combine. Do not over mix. (This is where we added the huckleberries.)
Preheat a cast iron skillet over a campfire. Add about 2 Tablespoons of oil to the pan and heat until it begins to bubble a bit.
Using clean hands, floured if possible, scoop a golf-ball size of dough from the bag and flatten it slightly. Drop it into the pan and repeat with the bannock dough until the pan is full but not overcrowded.
Cook bannock over medium-low heat until dark golden on one side, then flip and finish browning. Don’t cook it over too high of heat or it will darken before the interior is cooked through.
Serve warm, with butter, jam or your choice of topping.
