Today we are cooking salted egg pork ribs. I love the Chinese name of this dish, it is literally called golden send pork ribs, because of the golden color that brought out by the salted egg yolks.

Ingredients Used:
Pork Ribs x8
Salt 1/2 Tbsp
Rice Wine 2 Tbsp
White Pepper 1 Tsp
Chicken Bouillon 1/2 Tsp
Salted egg yolks x 6
Oil
Steps:
Marinate Pork Ribs
1. Marinate pork ribs overnight with salt, white pepper, rice wine and chicken bouillon
Salted Eggs
1. Steam the salted eggs for 30 minutes
2. Mash the egg yolks with a fork
Fry Pork Ribs
1. Heat up oil to 180 C (365F)
2. Fry the pork ribs until golden (~ 10 Minutes)
3. Take out the pork ribs and reheat the oil to 200C (390F)
4. Fry the ribs again for 30 seconds
Cook
1. Add 2 tbsp of oil to the wok and mix in the egg yolks
2. Add the pork ribs and mix with the egg yolk paste
