Along with this, we also share the recipe for Soft Patra, made using boiled patra, steamed to perfection, and finished with a fragrant tempering that enhances both taste and texture. Both recipes are flavorful, wholesome, and ideal for everyday meals, special occasions, or festive Gujarati thalis.
Ingredients | सामग्री
Patra Batter
Besan / Gram Flour (बेसन) – 1 cup
Jowar Atta (ज्वार आटा) – ¼ cup
Green Chillies – 2 (crushed)
Ginger – 1 inch (grated)
Turmeric Powder – ¼ tsp
Salt – to taste
Crushed Coriander Seeds – 1 tbsp
Crushed Black Pepper – 1 tsp
Garam Masala – ½ tsp
Fennel Powder (सौंफ) – 1 tsp
Oil – 1 tbsp
Tamarind & Jaggery Water – ½ cup
Lemon Juice – 1 tsp
Eno / Baking Powder – ½ tsp
Final Tadka
Oil – 1 tbsp
Mustard Seeds – ½ tsp
Hing – a pinch
Green Chillies – 2 (slit)
Sesame Seeds – 1 tsp
Fresh Coriander – for garnish
Grated Coconut – for garnish

Ridge Gourd / Turai (तुरई) – 2 medium (peeled & thick strips)
Patra (पात्रा) – 20 pieces (cut into 1×2 inch pieces)
Masala Paste
Sesame Seeds (तिल) – 2 tbsp
Grated Coconut (नारियल) – 2 tbsp
Nylon Sev – 2 tbsp
Fennel Seeds (सौंफ) – 1 tsp
Coriander Seeds (धनिया) – 1 tsp
Green Chillies (हरी मिर्च) – 2–3
Ginger (अदरक) – 1 inch
Fresh Coriander (हरा धनिया) – 2 tbsp
Garam Masala – ½ tsp
Water – as required (for grinding)
Tempering
Oil (तेल) – 2 tbsp
Mustard Seeds (राई) – 1 tsp
Cumin Seeds (जीरा) – 1 tsp
Hing (हींग) – a pinch
Turmeric Powder (हल्दी) – ¼ tsp
Salt – to taste
To Finish
Roasted Cashews – 2 tbsp
Lemon Juice – 1 tsp
Fresh Coriander – for garnish
