How To Make Green Bean Casserole from scratch, no cans!

Canned beans is the major reason why some people hate vegetables. So let's make fresh green bean casserole (or use frozen green beans if you must, much better than canned).
Green Bean Casserole
1 pound (about 500g) or so fresh or frozen beans
French-fried onions about 2 cups (1 will be mixed in and one for topping)
Mushroom Sauce
3 tablespoons butter
1lbs mushrooms, chopped
Few gratings fresh nutmeg (optional)
Freshly ground black pepper
1 teaspoon salt
2-3 garlic cloves, minced
4 tablespoons tapioca starch (or regular flour, if you prefer)
2 cups vegetable or chicken broth
1/2 cup heavy cream
1. Trim the beans, blanch them in hot water for 5 minutes (3 min for thinner varieties). Then place in ice water to cool quickly. Drain.
2. Over medium-high heat, melt butter in the pan. Add the mushrooms, salt and pepper and saute them for about 10 minutes covered. Add the garlic and saute one minute more. Add the starch and stir it until it fully coats the mushrooms. Add the broth, 1/4 cup at a time, stirring the whole time. Simmer mixture for 1 minute, then add cream and bring back to a simmer, cooking until the sauce thickens a bit, about 5 to 6 minutes, stirring frequently.
3. Preheat the oven to 350°F (175°C).
4. Combine the drained green beans, mushroom soup/sauce, and half of the French-fried onions. Transfer to the baking dish.
5. Bake for 25-30 minutes. Sprinkle the remaining French-fried onions on top, and return to the oven for an additional 5 minutes to crisp.
Let it sit for 10 minutes out of the oven before serving.
