Homemade Herbs De Provence Spice Mix Recipe

We love to make our own spice mixes because we can use fresher herbs (some from our garden!), and because we can personalize our recipes the way we like them. We ran out of one of our favorites Herbs De Provence mix so we are taking you along as we make it. DIY mixes are so fun to make and saves money.
This spice mix flavors savory dishes such as meats, roasted vegetables, grilled fish, salads, tomato based soups, and stews. Basic recipe includes fennel, marjoram, parsley, rosemary, tarragon (or chervil as replacement), and thyme. Some recipes include (or omit) basil, bay leaves, savory, chervil, sage, oregano, mint, and lavender.
HERBS DE PROVENCE
Makes about 5-6 ounces (about 150-180ml) by volume.
3 tablespoons of each: basil, marjoram, fennel seeds.
1 tablespoon of each: thyme, parsley, peppermint, tulsi.
1/2 teaspoon of each: rosemary, lavender.
We didn't have tarragon, so we increased fennel seed for licoricy sweetness. We added tulsi for more interesting basilness in addition to regular basil.
We like coarse powder texture, but you can decide if you want cut herbs, course or fine powder texture. We ground our dried herbs right before making the mix, and some like rosemary came from our garden.
